This big bold perennial is pretty much the epitome of an “architectural” plant. Dramatic, grey / green spiny leaves that can reach 18in (45cm) in length form a vase-shaped cluster than can reach 4-5ft (1.2-1.5m) wide by 6-8ft (1.8-2.4m) high here in the Pacific Northwest, less in hotter or colder climates. The equally dramatic purple flowers, that look like thistle blooms on steroids, can reach 3in (7.5cm) across. These arrive in mid-summer and are often left on the plant for winter interest. They are much favored by bees. Cardoons are hardy to 5 degrees F (-15C).
This is a cousin to the artichoke, and looks somewhat similar, but on this plant it is the leaf stalks that can be harvested for food.
